The course gives several combinations: a milk-chocolate ganache border with pistachio filling, dark ganache with salted caramel, and milk ganache with caramelised banana. You are not limited to one filling flavour.

Choose a filling formula developed for macarons. The reference does not validate replacing these with pistachio-flavoured whipped cream at the same quantities, so that particular swap needs chef confirmation.
